Picking Apples

Over the weekend my family and I went up to the foothills to pick apples. My favorite apples are Golden Delicious for eating and baking. Gala, Empire and Liberty are varieties I prefer just for eating. The next few days I will be busy baking so I can post new recipes to the FromTheFarm.com blog. Stay tuned.

Easy Apple Strudel Caramel Apples

    New England Apple Cake

    ½ cup softened butter
    1 cup sugar
    1 cup brown sugar
    3 eggs
    2 tsp vanilla
    2 ¼ cup flour
    2 ½ tsp baking soda
    1 tsp salt
    2 tsp cinnamon
    ½ tsp nutmeg
    7 cups coarsely chopped apples, loosely packed
    ¾ cup walnuts
    powdered sugar
    pre heat oven to 350 degrees. Grease a 10” bundt or tube pan. In large bowl cream together butter & sugars. Beat in eggs & vanilla until blended. In medium bowl combine next 5 ingredients. Add to creamed mixture; mix to combine. By hand stir in apples & walnuts. Spoon into pan. Bake 50 to 60 minutes or until toothpick comes out clean. Cool on wire rack for 10 minutes’ turn onto serving dish. Cool completely, dust with powdered sugar. Be sure to refrigerate leftovers.
